Water- our water is triple filtered, including reverse osmosis, then mineral balanced.
Fruits, Vegetables, and Leafy Greens- Organic or organically grown. Seasonal watermelon is conventional.
Quinoa/ Beans- Organic
Bread- sliced bread, buns, and pastries, are nonorganic but baked locally at Breadsmith bakery using non-GMO wheat with no preservatives, additives, or dough conditioners. Sliced Gluten-free bread is nonorganic from a local Co-op. Gluten free pastries are nonorganic from Sift Bakery. Tortillas are nonorganic from MN Tortilleria, La Perla. Pita bread is conventional.
Spices- Organic
Ketchup/Mustard/BBQ Sauce/Nut Butters/ Jelly/ Jam/ Vinegars/ Pickles – Organic
Olives/ Pepperoncini’s- not always organic but we try to source quality natural brands.
Salt- we believe salt is an essential part of life and is said to contain 80+ beneficial minerals needed to thrive. Conventional table salt typically has been chemically processed to remove the trace minerals and often anti-caking agents are added. We use only natural unprocessed salt like Himalayan Pink.
Oil- for cooking and dressings we use high quality conventional Greek olive oil that has a high smoke point.
Butter- we use real butter for cooking and baking. Organic butter used as much as possible.
Dairy- milk, buttermilk, sour cream, yogurt, blue cheese, feta cheese, sliced American, and sliced Swiss are almost always organic. Our shredded Provolone, Mozzarella, and Cheddar are sometimes but not always organic. Whipped cream is organic as much as possible. Dairy most often comes from Organic Valley, Rochdale Farms or Country View.
Pork- Bacon and ham are Compart Duroc™ conventionally raised on small family farms.
Eggs- Organic- Most often from Larry Schultz Organic Farm.
Beef- Conventionally raised Black Angus from MN and IA farms. Gyro meat- conventional.
Poultry- Chicken sausage- Larry Schultz Organic Farm. Chicken breast – Kadejan or Larry Schultz Organic Farm.
Turkey burger – Ferndale Farms or Larry Schultz Organic Farm.
Seafood- Walleye- wild caught Canadian. Salmon – wild caught Sockeye or sometimes Keta.
Shrimp and Tilapia are conventional.
Hot Dogs- Local TC Farms (pasture raised with organic seasoning)
Maple Syrup- did you know it takes 40-50 gallons of sap for one gallon of syrup? We only use 100% pure maple syrup, mainly sourced from local Somerskogen Sugarbush.
Beverages- we try to offer as many organic and or sustainable beverages as possible but also have some conventional items.
Vegan, Vegetarian & Special Requests
GLUTEN- SOME MEALS ARE PREPARED WITHOUT ANY ADDED GLUTEN INGREDIENTS, HOWEVER, THE MEALS CANNOT BE CERTIFIED GLUTEN-FREE BECAUSE GLUTEN IS IN OUR KITCHEN AND CROSS-CONTAMINATION IS A RISK.
